The Cowboy is the ultimate 'man v meat' steak. Ideal for roasting and cooking slow on the barbecue, if cooking in a pan cover and cook over a low heat, the flavours released from the huge bone during cooking give a sweet gelatinous flavour.

It's a succulent on-the bone piece of meat cut from the centre of the fore-rib that Fred Flintstone would be pleased to serve.
