All of our post-Christmas Turkeys are Kelly Bronze Stags. These are the male birds which will be about 12 kg in weight. They are grown for longer so they can be butchered into smaller cuts, so that customers can still get some good value from the smaller portions. After we slaughter, the birds are dry plucked and waxed and then hand finished to take out as many feathers as possible. The birds are then hung on special racks for twelve days. This is a traditional technique to tenderise the meat and to intensify the flavour. Don’t take my word for it, try and you will not be disappointed.
